Ingredients:
1 can black beans, drained and rinsed
1 cup frozen corn, thawed
3 scallions, sliced
3 plum tomatoes, seeded and diced
1/2 bunch cilantro, washed and minced
2 garlic cloves, minced
1 avocado, diced
olive oil
lemon juice
salt and pepper to taste
Directions:
1. Mix all of the ingredients together in a bowl. Enjoy!
