Whole Wheat Pasta with Artichoke Hearts


Ingredients:

2-4 servings of whole wheat pasta
1 yellow onion chopped
2 shallots, chopped
3 cloves minced garlic
1 can/jar artichoke hearts, chopped
salt and pepper to taste
Italian seasoning to taste
1 cup baby spinach leaves
1 tomato, chopped
1/2 cup shredded parmesan cheese

Instructions:

1. Boil the pasta in a pot with salted water.

2. In a saucepan, saute the onion, shallots and garlic until soft. Add the artichoke hearts, tomato and spinach and cook for about 5-7 minutes. Season with salt, pepper and italian seasoning

3. Drain the pasta and add to the vegetable mixture. Toss and serve with the parmesan cheese.
